I've been getting Endangered Species chocolate, because they have a bar that's 88% cocoa (per your advice not to go under 75%, George), and because it's fairly traded. I don't think it's organic. I really like it. It's just over $3 for a large bar at Shaws in Stow, MA.

Dunia in Maynard has Endangered Species chocolate too - they have several chocolates that are either fairly traded or organic. But they don't have this exact bar (but they are worth visiting for their chocolate and because it's a wonderful eco-friendly store run by wonderful eco-friendly people).
